For your pastry:

  • 200 gm flour
  • 100 gm butter
  • Two egg yolk
  • 3 tablespoons cold water
  • Beaten egg, to glaze

For your filling:

  • 150 gm raisins
  • 100 gm chopped apples
  • 25 gm blanched almonds
  • 1 Tbsp chopped candied peel
  • 3 Tbsp grated jaggery
  • Grated rind of 1 lime
  • 3 Tbsp rum
  • 1/2 tsp cinnamon powder
  • Pinch of ginger and peppermint powder
  • 25 gm melted butter
  • 1 sliced banana
  • 100 gm peeled grapes
  • Whipped cream to function

How to Make Fruit Pie

  • Sieve flour into a bowl.
  • Bind with crushed yolks and water.
  • Cover and chill for thirty minutes.
  • Roll out half pastry to line a 6″ flan ring. Chill.

For the filling:

  • Finely chop all ingredients together except the papaya and banana.
  • Line into ready flan. Moisten pastry edge with water.
  • Roll out remaining pastry to make a lid. Press more than filling.
  • Glaze with beaten eggwhites. Bake at 190 degrees C for 25 minutes until pastry is crisp and golden.
  • Serve warm with whipped cream.
